Gluten free Mozzarella sticks! It only took me about 20 minutes to make, and it's super easy!

Okay so the mozzarella sticks are so awesome. They're made pretty much like gluten ones. I won't really have measurements on this one because it depends on how much you want to make!

What you need:
A mouth or two.
Some string mozzarella
2 eggs
1 tbs milk
any GF flour (I used my home GF blend of tapioca flour, brown rice flour, and potato starch but any type of flour should do fine)
GF bread crumbs ( I used four pieces of bread)
Oil for frying

Do this:
Okay so I didn't buy premade GF bread crumbs I used some of the rice bread I had to make them. I toasted it on the cooking machine because I don't have toaster bags or a toaster that's just for GF stuff.
Toast.
You can try to crumble the toast with your hands or something but I gave up shortly after trying and used the ear ripper of doom, better known as the Magic Bullet. Any blender with a dry blade should work though. Just tear up the bread before you blend it.



Next chop your sticks in half if large. Next mix the egg and milk in a bowl and put flour in a separate bowl. In this order roll the sticks. Flour, egg-milk mix, crumbs. Set aside until all are rolled.





Next in heated oil (I used canola), fry them.



OMNOMNOM. I should have used more bread but they tasted awesome for a first try. Enjoy!

Gluten free sort-of-bread-sticks.

Blegh, I'm running low on brown rice flour. -_- Anyway, made bread sticks today to go along with dinner and though they're not shaped that.. uh.. well they taste good! My boyfriend ate one right after I got them out of the cooking machine then ate three more.

THIS STUFF:
2/3 cups of brown rice flour
2 tbs white rice flour
1/4 cup potato starch
2 tbs tapioca flour(starch)
1tsp sugar
1 1/4 xanthan gum
2tsp yeast
3/4 cup water
1 tbs melted butter
1 tsp cider vinegar
Something isn't quite right here...
First mix together all the dry ingredients. Next, in a separate bowl add the wet ones and mix with whisk or mixer. I used a stand mixer from the early 70's, lol. Once the wet mixture is mixed well add in the dry mix gradually.

Don't forget to melt the butter!



  Okay next watch out for wild Pook-a-looz, they're everywhere sometimes.


Everywhere.
Scrape the sides with a rubber spatula and mix for four minutes. Then put it on greased baking sheet and let rise for an hour. Use a MUCH smaller baking sheet than what I did. After it has risen bake in oven for 12 minutes at 400 degrees(F). Next, flip on to different baking sheet and cut up. Yes, mine are disfigured. :( after that just bake for 20 minutes then eat.

Doughnuts. It's easy and takes only about an hour and a half. The end results are AWWWHHHSOME.

Okay first I'd like to thank my boyfriend and his father for helping me with this. My boyfriend took pictures and his dad helped me cook the dough in grease, you're both super awesome. Anyway, I tried to make soft pretzels yesterday and needless to say they tasted naaaaaaaaaasty. So today I made doughnuts. They tasted like happiness. Oh, right you came here for instructions, riiiiiight.


Go to where you keep stuff and get this:
Okay first I used a jarred blend of flour. It was:
2 cups brown rice flour
2/3 cup potato starch
1/2 cup tapioca starch (or flour it's the same thing don't be fooled!)
You will use  2 cups of this.
Shake it up and set aside. You also need:
1 Tbs. butter (melted)
2 cups buckwheat (I used light buckwheat but any should be fine)
1 egg
1/2 cup sugar
1/2 cup milk
2 tsp baking powder
1/4 tsp nutmeg
2 tbs xanthan
Oil to fry, I mixed canola and vegetable oil.
LOOK I put something in a jar! I'm uber-trendy. 
As trendy as an 80 year old....
Now, do as I say....

Melt the butter then mix the milk and egg in to it.
DO NOT EAT.
Now that it's mixed add the sugar, baking powder, xanthan gum, and nutmeg.


Blend until it looks like the picture below, then add 2 cups of the rice flour blend:

Okay here is where the buckwheat comes in, it won't be a good enough texture so add the buckwheat flour little by little until it's a good enough texture to pick up and hold together in a ball. You most likely won't use two cups of the buckwheat flour but just in case have that much.
It should be the texture of a meat puppet.
I kid, I make bad joke.
hehehe.

IT DOESN'T BOUNCE, DON'T GET YOUR HOPES UP
NOT REAL BALL. JUST DOUGH.

Stick the ball of dough in the fridge for about 20 minutes covered in a damp paper towel or cloth.
That.
Meanwhile heat your oil, make it at least 230 degrees (F). The dough should sizzle and float when it makes contact. Flour a surface with cornstarch or something to roll out. Roll the dough out, and cut with something circular shaped, I used a cup.




I used a shot glass, because I'm hardcore. And you know, you're not hardcore unless you live hardcore.
Okay time for the oil. Pictured are when they're ready to be flipped and when they'e done. Keep them in the oil for about 30 seconds per side. If you feel they're done sooner (everyone is different), take them out.



Then just powder or whatever you want to do and go OMNOMNOM. Let them cool, unless you want the sugar and stuff to melt on to it.

What's that you say? IT SMILES BACK?! Oh, it's just goldfish...

Today I asked a few friends what I should make today, doughnuts or goldfish. Well, you can see the decision.

What you need, 'cause you know I got it:
4tbs butter
4oz cheddar jack cheese (or what ever kind you want)
3/4 cup cornstarch
1/4tsp salt
1/4 xanthan gum
1/2 tsp baking powder
2tbs milk
The book, plate, used washcloth, chips, shirt, and couch are not needed, but can also be added.*
Do this:
Add everything but the milk and cheese together and mix, after that add the cheese and mix, then the milk. I tried to use a whisk for all of this but it ended in sadness.

Really, really stuck.
This is what total sadness looks like.

After that roll out the dough on a flat surface and pre-heat that cooking machine of yours to 400(F). When you roll out the dough flour your surface with cornstarch and put plastic wrap over the dough, it makes it SO much easier to roll out. After it's rolled use cookie cutters or a knife to cut out shapes. It wasn't that much dough but it made a ton more than I thought it would. Grease a cookie sheet, while you're at it over there.





Stick in the oven for 10-12 minutes or until browned and crisp looking. Enjoy!
