Okay every GF pizza crust I've ever made does not taste, look, or feel like this.

Yay! The Giant Food Store near me sells GF King Author All purpose flour! I walked there today and saw a surprise near the yeast. It made me go :D and :3. Anyway, I really like the blend, if you can't get it I posted in my OMG BREAD post how to make it by yourself. It's only $5.00 near me, but it's like.. four cups  per box. They need to make bigger bags. It's what I used in this, you don't need much to make it, nothing hard to find like Teff flour or some crap. Anyway on to this!

Get out this stuffs to make nomnomnom:
3/4 cup GF AP Flour.
3/4 cup Tapioca flour
1 packet (1tbs+1tsp) unflavored gelatin
1 packet of yeast
3tsp xanthan gum
1tsp sugar
2tsp olive oil
1 1/2tsp Cider Vinegar
1/2 warm water
Should I call the Doctor about the crack in my wall? I'm getting worried.

 Okay add all the dry stuff together in a bowl and mix well, blah, blah, blah. After that put in the olive oil, and cider vinegar. Gradually mix in the warm water with everything. The stand mixer I use (from the 70's) so did not like so I stopped and mixed it by hand.




Yay! It's ACTUAL PIZZA DOUGH!
Scrape the sides and form it into a ball. Next, lay wax paper down on a surface. I used the pizza pan it's self. Put a heavy amount of flour down on it. I used tapioca flour. Just, if you do roll it out on the pizza pan make sure to not leave the flour on it, or the wax paper on it. It will smoke. This is where I say sorry to the people I live with for making something in the kitchen smoke at least once a week. I am sorry. Anyway, roll out how ever thin or thick you want it. Make sure it's not sticking on the bottom or to the pin. I didn't even use a rolling pin. I used a roll if cling wrap, lol. It didn't stick at all. Then once it's rolled out cook in a cooking machine for 7-14 minutes or until it's done at 400 degrees (F).

I uh, forgot the pizza sauce, but it tasted awesome as a white pizza anyway! :D

Gluten free chocolate cupcakes! :)

I officially have a cooking problem. These taste, like, well cupcakes. I used Bob's Red Mill GF all purpose flour because I was feeling lazy and didn't want to hear the blender grind rice, lol. Anyway...

This, this is what you need:
2 cups of GF all purpose flour
1 tbs buckwheat flour
1 1/2 tsp xanthan gum
3/4 cup butter (or 12 tablespoons that's what I did)
3/4 cup coca powder (I used dark chocolate coca powder)
1 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
2 cups sugar
2 tsp vanilla extract
1 1/2 tsp milk

Also, if you keep a man in your pantry, add that in too.
Okay, first mix the AP flour, buckwheat flour, baking soda, baking powder, coca powder, xanthan, and salt.
Try not to mix in any wild Pook-a-looz, or tadertots. 


Next, blend together the butter and sugar in  separate bowl. Then add in the eggs one at a time while blending. 

Egg.

Then add in the milk and vanilla and mix, then start slowing adding in the dry mix. Blend well, then put the mix in a cupcake pan that's well greased or has paper cups in them.


Again, do not add pook-a-looz.


Bake at 350 degrees(F) for 18-20 minutes.

Gluten free vanilla cake!

Okay so today I wanted to make a heart shaped cake. I got the idea at like 2 AM and stayed up way too late, so I woke up later than I wanted to. I ended up just not doing it mainly because parchment paper is my nightmare. The cake still tastes awesome, and trust me; I'm a professional nomer. This cake was made in a 2 1/2 inch pan, this recipe can be doubled, tripled, gazollpled or whatever.

This stuff:
Remember that brown rice flour mix I posted earlier? I used that, I'll post it again.
Mix:
2 cups brown rice flour
2/3 cup potato starch
1/3 cup tapioca flour
Stick in a bag and shake.
Shake.
 After that get out...

3/4 cup sugar
1/4 cup butter
2 eggs
1 cup of the rice flour mix
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon xanthan gum
1/3 cup milk
1 teaspoon vanilla extract

You know where this is going.
Do this....
Blend together the sugar and butter. Then blend in the eggs, after the eggs are blended add in the rest of the stuff.

Next it's time to give yourself a headache. Parchment paper. If anyone knows how to properly use this. TELL ME, PLEASE, PLEASE TELL ME.
Line your pan with parchment paper, cook in a stove preheated to 375(F) for 20-30 minutes.
Nightmare.
While it's cooking prepare your icing if you're making it.
Get out:
4 tablespoons of butter
1 tablespoon of milk
1 table spoon of vanilla extract
1 1/3 cups powered sugar
(food coloring if you want)
First, whip the butter with a mixer or whisk. Then add the milk, extract, and sugar. Beat it well then you're done! Or add the coloring then you're done!




Your cake should be done by now, flip it out of the parchment paper on to a cooling rack or something. Let cool then ice.

Gluten free chocolate cake! Flourless too!

So, cake is what I decided to make today. I'm visiting my parents house later today and my mother LOVES chocolate, so I thought that I'd bring her some too. It tastes awesome and you don't need much to make it. A plus... no flour!

What you need (cake):
12 oz of semi-sweet chocolate chips
7 eggs (separated)
8 tbs butter
3/4 cup sugar
1 tsp pure vanilla extract.
You know the drill people.


What to do:
First, preheat your cooking machine to 350 degrees. (F)
Next melt 8oz. of the chocolate in a sauce pan, you may want to use a smaller pan than what I did (heh).
It's like magic or something...


Let it cool, next in a bowl add the butter and sugar together and mix well. I used a mixer.

Next, add melted chocolate, egg yolks, and vanilla extract.  When adding the egg yolks, put the whites in separate bowl. It should end up looking like this:
Then, clean or get another set of mixers or mixing spoon whisk (etc) just as long as it's clean and beat the egg whites until frothy.

BASK IN IT'S FROTHYNESS PEASANT. 
Add 1/3 of the egg whites to your batter, mix in well, then mix the rest in.
NOM GOOP NOM. DON'T EAT THIS YET, BAD! YOU GET SICK. K? NO EAT! AGREE? K!
After that just add to a greased cake pan. I suggest using one you can lift the bottom out of. Bake for 30 minutes.
NOM.
The cake will drop, let cool for 5 minutes, then get a butter knife and just trace along the edges of the cake. Flip on to plate.

 While you're letting it cool, lets make the glaze.

What you need!
1/4 cup melted butter
2 cups powdered sugar
3 tbs milk
1 tsp vanilla extract

What to do:
Melt the butter in your microwave for 30 seconds, then add all the other ingredients to the melted butter and just mix with a spoon.


After you glaze is done put it on your cake, then put the rest of your chocolate chips on top and enjoy! It tastes sooooooooo good.
