Gluten free cornmeal crepes!

Yesterday we went food shopping and I couldn't find many gluten free things but I did find cornmeal, so I figured since I've never used it before; why not make something I've never actually eaten (my er.. 'taste tester' has though, don't worry it was just my boyfriend) or made. I'm listening to The Police while I write this... so.. anyway.. we're off...

What you need:
1/2 cup of All Purpose Gluten Free Flour
2 Tbsp. cornmeal
1/2 Xanthan Gum
1/4 tsp. salt
2 eggs whites
1 egg
3/4 cup milk
Jam or something of the sort.

This is my cooking machine, sometimes it burns me, but that's okay... I still love him. :(
Prep:
Add all the dry ingredients together in a bowl, shift them around a few times to everything is mixed evenly. Next, in a smaller bowl add the egg whites, egg, and milk together. Beat it with a whisk or fork, then gradually the milk egg mix.
Don't eat this, it doesn't taste good yet.
This doesn't taste good either!

NO IT'S STILL NOT OKAY TO EAT.

No don't... okay you want to taste it? It tastes like sadness.
After you whisk it (it should be nice and smooth), put it in a cup or something like that.
This is a cup.
Then heat and grease your skillet with butter, pour in a decent amount, next lift up the skillet and rotate your wrist so you move the skillet and the batter covers the whole bottom of the skillet.
It should look like this.
When flipped it looks like this.

Take it out and fill it with what you're filling it with, roll them up, and put on your toppings. Mine were powdered sugar and gluten free maple syrup.

Don't over fill it!

It was hard to figure out how to wrap it, I just rolled it sort of like a burrito.

Oh, while I was making these I was making my boyfriend and I fresh orange juice. Ever use a magic bullet blender? Ever stand next to seven trees getting chopped down at the same time by 7 rusty chainsaws? It's the same noise. -_-

Gluten free doughnut hole fail. :(

I tried to make gluten free doughnut holes today. Sad to say they tasted like sadness, sad puppy sadness. :( I did learn how to make a really, really nommy doughnut glaze though. Oh, and buttermilk learned to make that too. Oh well, tomorrow is a new day. -sigh- I need more baking supplies though. I only have a bag of soy flour, and I don't think that'd taste super good alone. -sigh-

Pizza! Pizza that's gluten free! It's short to make and super nom!

Pizza. I had the automatic urge to eat pizza the day I had to stop eating gluten, so today I made some. It only took roughly an hour because I was low on gluten free flour and had no yeast, so I cheated and used Gluten Free Bisquick. So lets get started :)

What you need:
1 1/2 cup of Bisquick
1/3 cup soy flour
1/2 cup oil
1/2 tsp basil
1/2 cup tomato sauce
1/2 cup mozzarella
2 eggs (beaten)
1 cup water
1/2 tsp sugar

Okay! Lets start!
Preheat your cooking machine to 450F. Add together the Bisquick, flour, basil, and sugar. Mix well! Crack the eggs in a separate small bowl and beat them together, then add them to the dry mix. Add the water and oil too then mix well. Pretty much.......
Take out this stuff.

Make the cooking machine hot!

When you mix it together it looks like this

Then after you mix it more it should look like this.
After it gets to look like the above, spread it out on a greased pizza pan. I found using this utensil below makes it easier to spread. (I do not actually know the name of it so, I'm calling it the cake-icingthing-spatula.)

So after you do that stick it in your cooking machine for 15 minutes.

COOKING MACHINE.
While this was cooking I decided to prep my other ingredients..
It didn't work out that well you see.. NEVER EVER buy a Pampered Chef can opener. It CUTS below the place where normal ones do.
The devil of can-openers. 
Lucky for me this was in the fridge. 
Anyway, now that your crust is done take it out. It will look cracked but that's okay. Now add your stuffs.
Chop up your stuff, or whatever you're using.

Add about this much sauce!

Cheese!

Toppings!
Stick it back in the oven for about 8 minutes.
 
If you want you can open your cooking machine and add more cheese!
Take out and enjoy! It tastes awesome!

Something Gluten-free that kids (and me) will and do love. :)

I just got done making Potato-pizza. It's nomy, gluten free, and roughly only 630 calories. Yes, this is in fact another food blog. :)
So, now, lets get started....

What you need:
Four or five potatoes
2 tbsp Olive Oil
1 egg
1 cup grated cheddar cheese (really, any kind of grated cheese you'd like)
4 tbsp tomato paste or Ketchup (I used Ketchup, gluten free, of course)
4oz (or more) thinly sliced mozzarella cheese
Dashes of salt here and there.

Food prep!
Boil water, add salt. Chop up potatoes. Add chopped potatoes, and a little bit of salt.
Go from this...

Then to this...

Make sure THIS is boiling...

Then add them, to the boiling water. 

Boil them for about for about 10-15 minutes. While you're waiting for them to boil, preheat your cooking machine for 400F. While you're waiting for both things to do their thing, oil up this thing, below the text!
THIS THING, RIGHT HERE.
Also do your other prep while they're boiling. Chop up your mozzarella.

Next, add together the Olive Oil, your grated cheese, and 1 egg. Beat together so it's like this.
It looks like this junk above this text.

By now or even before you're all done with the prep work above your potatoes should be done boiling. Drain them, let them cool a little, put them on a baking sheet, and spread your egg, cheese, and Olive Oil mixture over them. Pretty much here's a picture by picture for you :)
Their name is Hot, Very Hot.

You shouldn't have to put them too far apart.

Put it in your cooking machine for about 6-7 minutes.
THE COOKING MACHINE. 
When you take them out, spread your ketchup on them, and the chopped Mozzarella over the potatoes and put it back in your cooking machine for about a minute or two.

The final outcome is this! Add a dash of salt, and nomnom away!

Gluten free jelly cookies!


SUPRISE FOOD BLOG! Hey guys so today I decided to make gluten free cookies. And now, I'm going to explain how to make them, pictures and all. So we're off...

What you need:
A SMILE! :)
4 cups of all purpose gluten-free baking flour.
¼ cup of Soy flour
1 ½ teaspoon of xanthan gum
1 cup sugar
½ teaspoon salt
3 ½ sticks of unsalted butter
A dash or two of cinnamon!
2 large egg yolk beaten lightly. My eggs were fresh since I did it at my mothers and she has chickens.
Jam or Jelly or something you want in your cookies!
This stuff, this stuff right here.

The dough:
You can use a mixer but, I am strange and prefer to use my hands/wooden spoon.
Okay first combine the All purpose flour, soy flour, xanthan gum, cinnamon, sugar, and salt and stir/use your hands to make it well combined.
So, it'll look like this!

After this add the butter, I usually let mine sit out while combining other ingredients so it gets soft. When you add it take a metal spoon and chop it off into bits into your dry ingredients. Mix it until it looks like it's a coarse meal with pea-shaped butter bits.
Add the yolks! Make sure they are just yolks, and no whites. Remember to beat 'em before you add 'em.
After you add the butter and everything, it looks like this:

Now, stick the dough in the fridge for a minimum of two hours. I actually left mine in for a whole day.

Baking prep:
Take out the dough from the fridge for a little bit to let it soften. 
It should look like this after softened:

Preheat your cooking machine (better known as an oven). 
THIS IS A COOKING MACHINE! YOU PUT STUFF IN HERE TO MAKE IT HOT, OR WHATEVER.

Get your baking sheet(s) line it with parchment paper or wax paper.
Then, get a clump of dough and work it into a ball. It takes about five minuets per ball.
It should look like this.

Next, use your thumb, or something long and flat (that's what I normally do) and make an indent then fill it with jelly, jam, or whatever.

The above are not baked.

Put them in for 12 minutes, take them out and let them cool for about 5-10 minutes the cookies will be VERY soft after they come out of the cooking machine (oven) so don't touch!

SO WHAT IF MY STOVE IS DIRTY, LOOK AWAY THEN!

Now go NOM NOM NOM NOM!
These are filled with strawberry gluten-free jelly.
The bottom rows are filled with Nutella, which is naturally gluten free. :)
